Vegan Katsu Curry

Katsu Curry, an Asian dish that is sweet yet spicy. The subtle spiciness really goes well with the sweetness of carrots and onions. There are many ways which one can make Katsu Curry, I made a carrot based one, it was delicious. In addition the Katsu Seitan is wonderful, it was so crispy! This is a great dish for when you need a warm quick dinner.

  • 2 Carrots
  • 1 Onion
  • 1 Tsp of Garlic
  • 1 Tsp of Ginger
  • 25 g of Vegan Butter
  • 1 Tbsp of Tomato paste
  • 1 Tbsp of Ketchup
  • 1 Tbsp of Soy sauce
  • 2 Tsps of Honey
  • 1 Tsp of Chilli powder
  • 1 Tbsp of Garam masala
  • 1/2 of a Vegetable stock cube
  • 100g of Flour
  • 100g of Bread crumbs
  • 150g of Seitan
  • 50 ml of Vegan Milk
  • A drizzle of Oil
  • 1 Spring onion
  • 70g of Rice


  1. Chop the onions, garlic, ginger and carrot. Grab a pan, throw in some vegan butter, onion, garlic and ginger. Saute and let it brown gently. Add in the carrot and wait until is has become soft.
  2. Add in some more butter, tomato paste, ketchup, soy sauce, honey and chilli powder. Stir until combined. Add in some vegetable stock and garam masala. Blend until smooth, add in some water.
  3. For the Katsu seitan. Dip your seitan in some flour, then some vegan milk, then into some breadcrumbs.
  4. In a pan, pour in enough oil to shallow fry. Fry the seitanon one side and flip when cooked. Flip again until it is nicely crispy and brown.
  5. Wash your rice and cook it until done.
  6. Return the curry sauce to the stove, warm it up.
  7. Serve the rice on the side, Katsu seitan slightly on top. Drizzle some hot curry sauce on top. Garnish with some spring onion.
  8. Enjoy.
