Aloo Gobi can be eaten with many things, I decided to make a street style dish with these toasted buns and it was amazing. Of course I made it gorgeously spicy. This dish is super easy and quick to make! It is filled with veggies, but you can add more though!

Ingredients:
- A drizzle of Oil
- 1 Tsp of Cumin
- A pinch of Salt
- 6 Potatoes
- 1 Tsp of Turmeric
- 1 Tsp of Dried fenugreek
- 1/2 of a Cauliflower head
- 1 Tsp of Chili powder
- 2 Bay leaves
- 3 Black cardamom seeds
- 1/2 of a Cinnamon stick
- 1 Tsp of Ginger
- 1 Green chilli
- 1 can of Canned tomatoes
- 1 Onion
- A handful of Coriander
Instructions:
- In a pan, pour in some oil. Add in some cumin and salt.
- Peel and chop the potatoes in small slices. Add it into the pan and mix around, dash some turmeric as well as fenugreek in there too. Cook until the potatoes have softened and are slightly brown. (Cover them once they have been frying for some time). Set those aside into a dish.
- In the same pan, splash some oil, get some cauliflower, sprinkle some or a lot of chili powder along with some salt. Sprinkle some fenugreek too. Let that cook through and keep mixing.
- In a different pan, grab a couple of bay leaves, black cardamom, cinnamon stick, ginger, green chili and some oil. Mix that around and let the aromas arise.
- Grab some canned tomatoes and pour into the pan. Chop some onions and add those in too. Splash some water in there too.
- Take the cauliflower and potatoes and mix in with the sauce. Add in some coriander and stir. Let that cook covered for a couple of mins.
- Once you are ready to serve sprinkle some more coriander on top , toast some buns. Lay in the Aloo Gobi inside the buns and sprinkle some more coriander if you wish.
